A free-standing fryer is a deep fat fryer mounted on the floor (not countertop) and designed for high-capacity frying in commercial kitchens. Use one when you have substantial frying volumes, need large oil tanks, multiple baskets, and a dedicated fryer station rather than a small bench-top unit.

Consider your peak fry volumes, batch sizes and menu mix. A large tank (20-30 L plus) with twin baskets suits high output; smaller single-tank fryers may suffice for lower volume. Also check basket size, oil turnover, recovery time and whether filtration or automatic features are included.
